HOLY MONTH HIGHLIGHTS CULTURE
In Algeria, Ramadan customs have been practiced for
generations. Algerians generally break their fast with either a
glass of milk or buttermilk and the sweet date fruit. Dinner
tables are covered with a variety of warm meat and vegetable
dishes and cold salads. Hot soups, such as “harira,” or
“shorba,” are consumed first. At the end of the meal, people
indulge in dessert, such as “qalb a louz,” zlabiya, and q’tayef.
Ramadan nights are more alive. Men, women, and children
visit family and friends, go shopping, and tend to stay out late.
This is also a time for Algerian artists to show off their
work – musicians perform concerts in city halls, parks, and
theaters; artists display their work in exhibitions.

Ramadan is a time when Algerians become more attuned to
people in need. Volunteering has become a Ramadan tradition,
particularly among young people. High school students
devote some of their time to cooking and serving dinners at
“Rahma” restaurants, (Rahma is Arabic for clemency). There
are about five Rahma restaurants in the Greater Algiers region,
each serving between 120-400 meals a night. It is important
that the “dignity of the people” is preserved and that
everyone can break their fast with a warm meal, said President
Bouteflika.

in some families, there is no iftar without semolina bread..and i noticed that men love it more than women..

Thank you my dear sister for telling these wonderful information about ramadan in your country , it is very similar to our custome or it is about to be exactaly expect for some changes in the name of the food but we are doing it in a different way

Thanks for this info about Ramadan in Algeria. I liked much and wondered that Semolina bread.Is it  made with corn flour? I saw its photo (Hakimi sent) Looks like that .

Hi Zeus,

semolina bread can be made of either semolina or flour. we add some salt, oil and some water.

some yeast can be added in order to double the volume of the paste.

but the soumolina bread in Algeria dosen't look really like the photo posted by our friend Hakimi.

i'll try to find out one and post it for you..

Thanks Kikam, I'll be happy when I see it? Just from semolina? We have a kind of desert which is made from semolina, firstly roast it with oil and then add syrup.We disperse (give) to our neighbour at Kandil time(Holly nights). After this to think semolina as a bread is a bit interesting.If you give me its whole recipe I will try to cook it.( I guess it is not dry and tough, isn't it?

thanks friends,i' feel too hungry.

what hakimi pasted is a kind of bread made at home,but we have other kinds and may be kikam talked about what we call'almatlou'.some families do it everyday in ramadan,but we do not as we have not much time nowaday.

you're right, iwas talking about "el matlou3"..mmm we like it very much especially xith sauce, but as you said, we often don't have enough time to prepare it..
